Yun Tai Mountain is located in An Hua County of Hunan Province and is home to some of Hunan's most remote and wild tea gardens. This tea is from those "un-tended and wild" tea gardens at an altitude of 1200 to 1350 meters above sea level.  The Yun Tai mountains have a karst base and are very steep.  They provide excellent drainage, access to direct sunlight and mineral nutrients to the tea plants.

This Premium Grade Wild Tian Jian was hand processed at each stage.  It has a slight pine smoke taste with hints of molasses and peat.  This is countered with slight mineral taste and some astringency that serves to remind the drinker they are are drinking tea instead of some magical concoction borne of a marriage between a highland scotch maker and a Hunan mountain sprite.

Versatile, complex, smooth, and fantastic

"This tea works for just about any mood. If you have time to spend with it there is plenty to notice in the flavor profile -- the smokiness, sweetness, and other elements in the description all come through, and none of those elements over powers any of the others. But it's not like some complex teas that demand a high level of attention -- if you're in a hurry and just need a quick, solid cup of tea this can deliver that too. Plus it's hard to over brew -- I've often called away by my kids or some morning crisis in the middle of brewing only to come back to a bitter mess of ruined leaves, but this tea has always been very forgiving. Heck, I even tried doing a batch of cold brew iced tea with this on a whim in the middle of a summer heat wave -- a practice I usually reserve for budget black teas -- and it returned a refreshing but very refined brew. If I had to choose a single tea to drink for the next year this would definitely be on my short list of candidates! Highly recommended."

Beguiling Tea!!!

"I had to purchase this tea when Scott mentioned "single malt" and "Water sprites"... two of my favorite things! The tea is true to Scott's descriptor. This is my first Hei Cha, so I do not have a reference point for this type of tea. However, I do use the word beguiling to describe a certain quality which cannot be readily verbalized.. This tea beckons to be tasted again and again. As an acupuncturist and Chinese herbalist, this tea almost feels "medicinal", and I mean that in a good way. There is something very clean and uplifting in the taste [mineral, turpentine] that tells my body "this is a healing substance". Heartily recommended!"
