This is a Tong Mu village area Jin Jun Mei that is processed with low heat and short frying times to preserve the trichomes (leaf hairs) on the leaves. The original character of this tea plus the careful processing has given this tea creamy chocolatey taste that is joyous to experience! There is also fruit and malt, and (if you brew long or with super hot water) a slight astringent character. Careful brewing with initially cautious (short) steeps brings out the best in this lovely tea!

Chocolatey and smooth. A bit

"Chocolatey and smooth. A bit of currant or berry preserves as it cools. More subtle and syrupy but very balanced and hard to over steep."

Chris L. (5/5)

Very nice tea

"It is not as chocolatey as expected but it still has a nice malty black tea flavour and a lot of powder from the first buds."

One of my favorite go to tea’s.

"I love this tea! The flavor is rich and full but nuanced so it’s not bitter. The hint of cacao makes this a favorite. May I never run out."

TONGH MU GYUAN “FRUIT AROMA” ZHENG SHAN XIAO ZHONG BLACK TEA SPRING 2024 HS CODE:090230 ORDER #157493

"DRIED LEAF APPEARANCE Appearance dominated by its variable color of light and dark brown tones. Small and uniform, not tightly twisted. Rolled around themselves to form a coil. A light to dark brown color. The leaves are not whole, but chopped. Beautifully fragrant. The aroma of the dried leaves is captivating. It is rich and complex. This delicate aromatic profile reveals the depth and complexity of the tea even before it reaches the cup. These leaves are not just ingredients: they are a sensorial promise of the journey that awaits to you. Initial notes of almonds, tamarind, and a delicate floral touch. It is warm, sweet, and deeply evocative, dominated by notes of caramel and ripe fruit. A complex interplay of fragrances is perceived that invites you to pause and inhale again. The first sensorial delight comes from the aroma itself, a captivating blend of fruits and nuts. Its fragrance is sweet and with aromatic tones. INFUSION OR MOIST TEA LEAVES Chopped. Medium in size. Many of them not fully opened. Its fragrance is of dry wood, not sweet and with little fragrance. The aromas are not overwhelming, but blend harmoniously, offering a foretaste of the cup's depth. Chocolatey brown color. LIQUOR ODOR High, with very sweet nuances, with a variety of tones. It has a pleasant sweet smell that represents the freshness of the tea leaves. Essentially reminiscent of tamarind. It has a very mild biscuity aroma. It is also nutty and reminiscent of almonds. INFUSION It is vibrant, with an overwhelming essence of fruity flavor nuances. A beautiful, full-bodied amber infusion: appealing, clear and clean. The infusion has a bright and evocative aroma with a marked fruity and floral complexity, with subtle nuances that unfold when you breathe the leaves. Attractive appearance with a blend of brown, almost coppery tones. Clean, clear, and bright. The fragrance is not overpowering; instead, it offers a refined richness that reflects the tea's delicate character. With each sip, a cascade of nuanced flavors unfolds: ripe fruits, tamarind, nuts, and dried fruits. A delicate astringency gently activates the palate and lingers beautifully on the tip of the tongue. This tea lingers, both in the cup and in the memory. The finish is long and satisfying, with a return to the fruity notes, leaving a memorable aftertaste. AROMA (1) The caramel aroma is packed with other complex fruity notes that result in a very pleasant aroma. It speaks of a soft and pleasant "confectionery" smell—like a variety of pastries. It also resembles some aromatic characteristics of freshly baked vanilla cake. FRAGRANCE (2) It is beautifully fragrant with hints of fresh, ripe apples. Sweet vanilla essence. (1) AROMA - This is a more general term for any smell. It is the scent released when tea comes into contact with hot water (infusion) or when it is sipped. It is closely related to the sense of taste and translates into flavor. (2) FRAGRANCE - This is a pleasant, subtle scent. The scent of dried tea leaves emanating before brewing. It is usually low in intensity."

Q&A

For a gongfu style preparation, what would you recommend for: - grams of leaves per grams of water? - rinse before first infusion? At what temperature and for how long? - temperature and time for each infusion?
Water temperature should be close to 90C Use 5-6 grams of black tea per 100ml of volume. Brief 10 second wash... then 10s, 15s, 20s, 30s, 45s, and then maybe a minute each time until it's brewed out. I prefer to gradually coax out the subtle flavors.
