amazing mouthfeel

"I always find myself reaching for this cake because it's so good that I want to drink it, but it's also so good that I want to put it back and let it age. This makes for a very complicated decision making process in the morning for what is otherwise a pretty straightforward and enjoyable experience. There's a lot of good stuff going on already and lots to look forward to as well. This tea will definitely do well over a long period of time, it has that characteristic aromatic strength on the dry leaf that lets you know you're dealing with something that will ooze out tons of flavor many years into its life. The most amazing part of this tea is, undoubtedly, the mouthfeel. Wow. The flavors are good but that really isn't the point with this cake... it's not very often that you get to experience something so thick and voluptuous. I feel like I need a steak knife when I brew this tea. The aroma of the dry leaf is awesome - pungent and peppery with just the right amount of sweetness to keep things interesting. The sweetness really opens up when you rinse the tea - I get some milk chocolate and raw cacao powder notes sitting on a base of starchy pie dough with some beef jerky and black pepper. These notes definitely come out in every cup and are present for the duration of the session, until the end where the sweetness fades, the meat and spices are muted, and that pie dough tastes more like pasta water. Although that may sound bad, I think the pasta water thing is actually something to get excited about. That pasta water note will definitely change and I have a feeling the terroir of this tea will reveal itself more as the coarser leaf material does its thing over time. I'm expecting some woodsy notes to come out and mingle with the spicy layers of meaty goodness that are so warm, tender, and juicy. Only 2 years old, and 7 grams of this cake in an 80mL teapot will give me 8-ish amazing cups. I think over the next few years, that number will go up as the back end of this tea evolves."
