Our Premium grade "Jin Jun Mei" is spring harvest from the Wu Yi mountains of Fujian.  Wu Yi Shan is well know for it's rock oolongs (like Da Hong Pao, Tie Luo Han and others), and black teas.  A long tradition of tea craft in Wu Yi combined with unique soil and growing conditions gives this black tea a special taste.

Small leaf varietal tea leaves are picked wilted and then oxidized in small batches.  The tea is sweet and malty and brews a copper red tea soup!

An excellent black tea, especially at this price

"This is a phenomenal tea for the price. Very malty, rich and sweet. By around the 3rd brew it can get a little bitter, but if you keep brewing it (say 6 brews or so, and you can push it even further than that), the sweetness and subtlety really sing through. I've tasted better Jin Jun Mei that is ever so slightly better, but at almost 3 times the cost."

Q&A

For a gongfu style preparation, what would you recommend for: - grams of leaves per grams of water? - rinse before first infusion? At what temperature and for how long? - temperature and time for each infusion?
Water temperature should be close to 90C Use 5-6 grams of black tea per 100ml of volume. Brief 10 second wash... then 10s, 15s, 20s, 30s, 45s, and then maybe a minute each time until it's brewed out. I prefer to gradually coax out the subtle flavors.
