Mi Lan Xiang (aka Honey Orchid Aroma) Dan Cong is the most well-known Dan Cong style. Bai Ye varietal is used and was expertly processed over a period of a month to give it a special thick, sweet and floral (orchid) aroma. The leaves are larger and broader than many other varietals and the finished dry leaf is a deep brown color. The brewed leaves are also more brown (and less green) than most other Dan Cong oolongs. This higher degree of oxidation due to roasting brings out the delicious honey and orchid taste. When you experience the wonderful taste keep in mind it's all due to the skill of the master who lovingly processed this tea into something so special and delicious!

"I’m still learning about steeping times and water temperature for Oolongs. For this one, I did a quick steep at 206/96 degrees and after the second steeping, I noticed some astringency I didn’t care for. The first two steepings had some lovely notes of sweet honey. of course, but there was even some delicate floral notes that made this tea rather enjoyable."

Q&A

For a gongfu style preparation, what would you recommend for: - grams of leaves per grams of water? - rinse before first infusion? At what temperature and for how long? - temperature and time for each infusion?
1 gram of tea per 20ml device (120ml gaiwan or teapot use 6 grams). 90C water. Rinse 5-10 seconds. 1st steep 10-15s, 2nd 15s, 3rd 25s, and so on. You can also increase the water temp if you want it stronger for the next session.
Would I be able to get some brewing advice for this tea? It is my first dan cong, and I am wondering how other, more experienced drinkers are brewing it, so that I can try it and compare with my ways. (My favourite so far is 100C water, 1g/100ml, 15s, 15s, 15s, 15s, 15s, 18s, 21s, 24s, etc.)
5-6 grams per 100ml. 1 gram is way way way too little.
